Chitosan Glutamate
Introduction: Chitosan glutamate is type of organic salt synthetized by Chitosan and glutamic acid. It has an identical component of glutamic acid as MGS (monosodium glutamate) and a freshness-enhancing effect. Using Chitosan glutamate instead of MGS for freshness-enhancement has the following advantages: since Chitosan salts do not contain sodium ion, the amount of intake is not related with the prevalence of hypertension, diabetes and kidney diseases; as a green food additive, Chitosan glutamate has multiple effects of Chitosan salts including immunological regulation, antibacterial activity, adsorption of heavy metal and film formation, etc.
Characters: Off-white powder; water-soluble Chitosan derivative; clear and transparent in aqueous solution; has a flavor similar to MSG.
